Lemon Rice Pilaf

List of Ingredients
2 teaspoons unsalted butter
2/3 cup chopped onion
2 cups long grain brown*
4 cups chicken stock -- or vegie stock
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
1 bay leaf
1/2 teaspoon salt
1/4 teaspoon white pepper
-In a medium sized saucepan, melt the butter over moderate heat.
-Add the onion & saute, stirring occasionally, for 5 minutes or until softened.
-Add the rice and cook, stirring, for 1 minute or until rice is well coated with the butter.
-Add the stock, lemon juice, zest, bay leaf, salt and pepper.
-Bring to a boil.
-Lower the heat, cover, and simmer until the rice is tender and all liquid has been absorbed-15 to 20 minutes{*35-40 minutes for brown rice.** Brown Basmati or Uncle Ben's Converted Rice are SB legal}
-Remove and discard the bay leaf.
-Garnish with lemon zest curls.
-Serves 6-8Recipe
