    Artichoke and Blue Cheese Soup

    1 T Butter
    1 Onion, chopped
    Juice of 2 lemons
    2 8 oz. packages frozen artichoke hearts
    3 C chicken broth
    1/4 t dried thyme
    1/4 C whipping cream
    2 ounces crumbled blue cheese
    Chopped fresh chives

    Melt butter in a heavy, large saucepan over medium heat. Add onion and saute until translucent - maybe 10 minutes. Add lemon juice and simmer until all liquid evaporates. Add artichokes, broth, and thyme. SImmer until artichoke hearts begin to fall apart - maybe 10 minutes. Remove from heat and cool slightly. Working in batches, puree soup in blender or processor until smooth. (All this can be done 1 day ahead if you want, just cover and refrigerate).

    Then, pour soup into saucepan. Stir in cream and cheese. Simmer over medium until cheese melts and soup is smooth - stir constantly - about 2 minutes. Season to taste with salt and pepper. Ladle into bowls and sprinkle with chives
