Unbeatable Salmon Rub

Recipe Introduction
This rub works great on all fish and we love it on chicken too.
List of Ingredients
3 Tablespoons salt
2 Tablespoons sugar
1 Tablespoon brown sugar
2 teaspoons black pepper
2 teaspoons celery seed
2 teaspoons paprika
2 teaspoons garlic powder
1/2 teaspoon chili powder
1/4 teaspoon ground cumin
1/4 teaspoon ground fennel seed (optional)
Recipe
Combine all rub ingredients and sprinkle several Tablespoons on the flesh side of the fish, working it in with the back of a spoon. If fillet is from less oily variety, first coat with thin layer of mayo. Place fillet on lightly oiled cooking rack and place on grill. Close the grill--do not turn fish. The fish is done when flesh separates into dry flakes.
