    Recipe Introduction

Best ever light rolls--so easy to make!

    List of Ingredients

    3 1/2 cups flour
    2 tablespoons sugar
    1 package yeast
    1 1/4 teaspoon salt
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1 cup warm buttermilk
    1/2 cup vegetable oil
    1/3 cup warm water
Melted butter for brushing on rolls after baking

    Recipe

In a large bowl, combine 1 1/2 cup flour, sugar, salt, baking powder, and soda. Dissolve yeast in warm water. Add oil and buttermilk to flour mixture. Add yeast and beat until moistened. Stir in enough flour to form a soft dough. Turn onto a floured surface and knead until smooth and elastic, about 4-6 minutes. Cover and let rest for 10 minutes (I usually let it rest until doubled which takes about an hour). Roll out to 1/2 inch thickness, cut with floured cutter ( I use a drinking glass). Place on greased baking sheet. You can bake them immediately or I let them rise again for about 30 minutes. Bake at 400 degrees for 15-18 minutes. Take them out and brush with melted butter.
