Recipe Introduction
Yummy chicken with coconut milk and cream cheese!
List of Ingredients
3 large chicken breasts, cooked and cubed or shredded
(or one chicken cooked and meat removed from bones)
1 can coconut milk (2 vidros in Brazil)
8 oz. cream cheese (use requeijao in Brazil)
1 bunch green onions chopped fine
1 large or 2 small tomatoes chopped fine
1 teaspoon coriander
salt and pepper to tasteRecipe
Combine coconut milk and cream cheese by melting in the microwave or on the stove top. Add onions, tomato, coriander, salt and pepper. Place chicken in telha or casserole dish. Pour sauce over chicken. Bake at 350 degrees for 40-50 minutes until hot and bubbly. Add a bit of water if it gets too thick.
Serve with rice and batata palha
Feel free to change up the spices or add more vegetables if desired.
