List of Ingredients
1/4 cup balsamic vinegar
1/4 cup sugar
1/4 cup brown sugar
1/4 cup soy sauce
1 tsp. crushed red pepper
1/4 tsp. salt
1 clove garlic minced
1/4 cup creamy peanut butter
1 tsp. coriander
4 boneless chicken breasts
8 oz. thin spaghetti
1 cup shredded carrots
1/2 cup shredded mozzarella cheese
Recipe
Combine first 7 ingredients in a 1 1/2 qt. saucepan and bring to a boil, stirring frequently. Remove from heat. Add peanut butter, stir with whisk until smooth. Set aside and add coriander (or fresh cilantro). Grill chicken breast until thoroughly cooked. Boil pasta according to package directions adding carrots one minute before draining. Drain pasta and carrots. Mix sauce in with spaghetti and serve it with sliced chicken and sprinkle with cheese.
