    List of Ingredients




    1 cooked 20 cm (8 inch) pie shell

    Pineapple layer:
    450g (1 pound) can crushed pineapple
    ¼ cup cornflour
    ¼ cup water
    2 egg yolks

    Meringue layer:
    2 egg whites
    4 tablespoons sugar

    Coconut Cream Layer:
    1 ½ cups milk
    ¾ cup sugar
    ¼ cup cornflour
    ¼ cup water
    1 cup dessicated coconut
    1 tablespoons butter
    1 teaspoon vanilla

    Recipe



    Pineapple layer:
    1. Bring crushed pineapple to the boil.
    2. Mix cornflour in water, add egg yolks, and stir into the pineapple, stirring well and cooking until thick. Set aside.

    Coconut Cream:
    1. Heat milk, sugar and pinch of salt, stirring until sugar dissolves.
    2. Mix cornflour in water, and add to mixture, stirring until thick.
    3. Remove from heat and add coconut, butter and vanilla.

    Assemble Pie:
    1. Spoon half coconut cream into the pie shell.
    2. Add pineapple layer.
    3. Top with remaining coconut cream.
    4. Whip egg whites till stiff, gradually adding sugar and beat well till stiff.
    5. Pile meringue on top of pie - it will be piled up quite high.
    6. Bake 180°C (375°F) for 15 minutes.
    7. Serve cooled.
