    Preheat oven to 500 degrees.
    I took 2 jelly roll style cookie sheets (the kind with short sides). Spray with Pam.

    As far as vegies, use whatever you like. I wanted it to be 0 points, so this is what I used.

    Coarsely chop
    2 large onions (I used yellow)
    3 stalks celery
    3 zucchini
    about 2 cups yellow summer squash
    1-2 cups baby carrots, cut in half
    1-2 cups shredded green cabbage
    1-2 cups mushrooms, quartered
    1 cup fresh green beans, about 1" pieces

    Spread out vegies on the 2 pans. Spray with olive oil or Pam. Bake for 25 minutes, stir, and bake for 25 more minutes.

    Put 1 qt. chicken broth (that's all I had, doubled would be good) in stockpot. If the chicken broth isn't salted, then salt the vegies while still spread out on pan. Add to broth. Add

    1 15 oz. can stewed tomatoes (regular would be fine)
    about 1/4 c. chopped basil (I used sweet & thai)
    2 tablespoons chopped chives
    2 tablespoons fresh chopped oregano
    fresh garlic (you decide how much)

    Heat through.

    The vegies are so sweet that if you only added salt & pepper it would be great.
