    French Raspberry Muffins

    5 Tbsp butter

    1/2 cup sugar

    1 egg

    1/2 cup milk

    1-1/2 cups flour

    2-1/2 tsp baking powder

    1/4 tsp salt

    1/4 tsp nutmeg

    Raspberry preserves (for filling)

    1/2 cup melted butter

    1/2 cup sugar

    1 tsp cinnamon







    Recipe



    Cream butter and sugar together. Add egg and milk; mix well. Stir in flour, baking powder, salt, and nutmeg. Divide batter into 2 equal portions.


    Using one portion, spoon an equal amount into each greased muffin cup. In center of batter, place 1 teaspoon of the raspberry jam for large muffins (1/2 teaspoon for small muffins). Cover with remaining batter.


    Bake at 350 degrees for 20 to 25 minutes, until golden brown. Let cool in pan for 5 minutes; turn out. Roll muffin tops in melted butter, then dip in sugar mixed with cinnamon.

    Makes 12 to 15 large muffins.
