Cake-Maple Nut Cake

- 2-1/4 cups sifted cake flour
- 1/2 cup sugar
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup shortening
- 1/2 cup milk
- 1 cup maple syrup
- 2 eggs
- 1/2 cup chopped walnuts
- 7 minute maple frosting:
- 3/4 cup maple syrup
- 1/4 cup sugar
- 1 egg white
- 1 tsp. light corn syrup
- 1/8 tsp. salt
Instructions
- Sift flour, sugar baking powder and salt into a mixing bowl.
- Add shortening, milk and about 1/4 cup maple syrup
- Beat Mixture for 2 minutes with electric mixer on medium speed.
- Scrape the bowl; then add the remaining maple syrup and the eggs. continue to beat the mixture for 2 minutes.
- Blend in the chopped nuts.
- Pour batter into greased pans lined with wax paper.
- Bake the cake in a moderate oven 350 degrees for 25-30 minutes for layers or 35-40 for oblong.
- Cool cake.then frost with maple frosting.
- Frosting:Place all ingredients in top of double boiler.
- Beat the mixtue for 1 minute with an electric mixer. Place the mixture over boiling water and cook it beating constantly until it is stiff enough to stand in peaks (about 7 minutes)
- Keep the water in the double boiler boiling actively throughout and scrape the mixture from the sides of the pan with a rubber spatula several times during cooking.
- Remove the frosting from the heat and continue to beat until it is cool and of spreading consistency.
