    Cake-Judy's Spanish Bar Cake

    List of Ingredients

    3/4 cup sugar
    1 cup (2 sticks) margarine
    1 cup dark raisins
    1 cup water
    1/4 teaspoon salt
    1 teaspoon ground cinnamon
    1/2 teaspoon ground cloves
    1/4 teaspoon ground nutmeg
    1/4 cup molasses
    2 cups flour
    1 teaspoon baking soda
    1/2 teaspoon baking powder
    Frosting (see recipe)


    Recipe

    Preheat oven to 350 degrees.

    In saucepan, combine sugar, margarine, raisins, water, salt, cinnamon, cloves, nutmeg and molasses. Bring to boil and continue to boil 3 minutes. Remove from heat and cool thoroughly. When cool, add sifted dry ingredients. Mix well with wooden spoon. Spread into greased and floured 13-by-9-inch pan.

    Spread batter evenly. Bake in preheated oven 20 to 25 minutes. Test with toothpick for doneness. When done, remove from oven and cool. Frost and cut into bars or cut cake into 3 sections and frost each. Makes 24 servings.

    Variations: Candied fruits and nuts can be added.

    Frosting
    1 package (3 ounces) cream cheese, room temperature
    1 tablespoon margarine, room temperature
    1 teaspoon vanilla extract
    1 1/2 to 2 cups powdered sugar
    1 to 2 tablespoons warm milk

    Combine ingredients and mix well. Use more or less milk, to reach desired consistency.
