Cake-Strawberry Funny Cake in a Pie Crust

Recipe Introduction

This one is really unusual. Cake cooked in a pie shell.

List of Ingredients

1 (9 inch) unbaked pie shell
1 (12 ounce) package frozen strawberries
1/4 cup butter or margarine, softened
1/2 cup sugar
2 tblsp light corn syrup




Recipe

Thaw strawberries and drain well. Put softened butter, sugar, corn syrup and 3 tblsp juice from the strawberries in a saucepan and cook for 2 minutes, stirring constantly. Set aside to cool.

Make Cake Batter:

1 1/4 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
1/2 cup white sugar
1/4 cup shortening
1 tsp vanilla extract
1 egg

Sift dry ingredients; add shortening and milk. Mix on medium speed of mixer for 2 minutes. Add vanilla and egg and beat 1 minute. After sauce cools, add strawberries. Pour cake batter into the crust and top with cooled swrawberry sauce. Bake in a preheated 350 degree oven for
50 minutes. [Genie]
