--These are the old fashioned "Bread and Butter" type pickles. I keep a supply of these all the time. They are my favorite.
List of Ingredients
4 quarts cucumber slices
6 medium white only slices
2 small green peppers, chopped
3 cloves garlic
1/3 cup salt, coarsely ground
3 cups cider vinegar
1-1/2 teaspoons turmeric
1-1/2 teaspoons celery seed
2 tablespoons mustard seed
Recipe
Place sliced cucumbers in a large glass bowl, add sliced onions, peppers, whole garlic and salt.
Cover with cracked ice.
Mix thoroughly.
Let stand for 3 hours.
Drain well.
Combine remaining ingredients, pour over cucumbers.
Heat just to a boil.
Seal in hot sterilized jars.
Process in hot water bath for 5 minutes.
Yield: 8 pints
Final Comments
Note:
DO NOT PARE CUCUMBERS - SLICE THIN
When processing start timing when water returns to boiling. Always use clean hot, sterilized jars and lids.
