Egg & Sausage Casserole

List of Ingredients
- 1/2 pd. pork sausage
- 3 tablespoons butter, divided
- 2 T. flour
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1-1/4 cups milk
- 2 cups hashbrown potatoes (I like mine fresh not frozen)
- 4 eggs, hard boiled and sliced
- 1/2 cup corn flake crumbs
- 1/4 cup sliced green onions
Instructions
- Preheat oven to 350 degrees. spray a two qt. oval baking dish with non-stitch cooking spray.
- Crumble sausage into large skillet and brown over med-high heat until no longer pink.
- drain sausage on paper towels. Disgard fat and wipe skillet with paper towel
- Melt 2 tablespoons butter in same skillet over medium heat. Stir in flour, salt and pepper until smooth.
- Gradually stir in milk. cook and stir until thickened.
- Add sausage, potatoes and eggs. Stir to combine. Pour into prepared pan.
- Melt remaining 1 tablespoon butter. Combine cornflake crumbs and melted butter in bowl. Mix.
- Sprinkle evenly over casserole.
- Bake uncovered 30 minutes or until hot and bubbly.
Sprinkle with onions.
- Makes 6.
