    List of Ingredients


    • 1/2 pd. pork sausage
    • 3 tablespoons butter, divided
    • 2 T. flour
    • 1/4 teaspoon salt
    • 1/4 teaspoon pepper
    • 1-1/4 cups milk
    • 2 cups hashbrown potatoes (I like mine fresh not frozen)
    • 4 eggs, hard boiled and sliced
    • 1/2 cup corn flake crumbs
    • 1/4 cup sliced green onions


    Instructions


    1. Preheat oven to 350 degrees. spray a two qt. oval baking dish with non-stitch cooking spray.
    2. Crumble sausage into large skillet and brown over med-high heat until no longer pink.
    3. drain sausage on paper towels. Disgard fat and wipe skillet with paper towel
    4. Melt 2 tablespoons butter in same skillet over medium heat. Stir in flour, salt and pepper until smooth.
    5. Gradually stir in milk. cook and stir until thickened.
    6. Add sausage, potatoes and eggs. Stir to combine. Pour into prepared pan.
    7. Melt remaining 1 tablespoon butter. Combine cornflake crumbs and melted butter in bowl. Mix.
    8. Sprinkle evenly over casserole.
    9. Bake uncovered 30 minutes or until hot and bubbly.
      Sprinkle with onions.

    10. Makes 6.
