Turkey with Pimento

1 & 3/4 cup store bought herb seasoned bread stuffing
1 small onion, chopped
1 celery rib, finely chopped
1/4 tsp. poultry seasoning
2 cups diced cooked turkey
1/4 cup butter
1/4 cup all purpose flour
1/4 tsp. salt
1/4 tsp. black pepper
2 cups chicken stock
3 large eggs
Half of a 102/3 oz can of condensed cream of mushroom soup
1/4 cup milk
1/2 cup sour cream
1/4 cup chopped pimientos

PREHEAT OVEN TO 325
In a bowl, combine bread stuffing, onion, celery and poultry seasoning, then sprinkle over bottom of a medium sized baking dish. Place the diced turkey over the top.
In a sauce pan. melt the butter over medium heat, then add the flour, salt and pepper, and stir for about a minute. Add the stock and stir until thickened, then remove from heat.
In a small bowl, beat the eggs and add a small amount of the hot stock, stirring constantly, then add the remainder of the eggs to the stock, stirring constantly until well blended and smooth.
Pour the sauce over the turkey and dressing and bake until custardy, about 45 minutes.
In another sauce pan, combine the soup, milk, sour cream, and pimiento and stir over modertate heat until well blended and hot.
TO SERVE: Cut the turkey dressing into squares and top each portion with the pimiento sauce. Serves only about 6
It also makes a great dish for leftover turkey.
