    List of Ingredients












    large chicken breasts -- cut into bite-sized pieces

    1/2 cup milk
    2 eggs -- well beaten

    salt

    flour

    Sauce
    3 chicken boullion cubes
    3 cups water
    2 tablespoons oyster sauce
    2 tablespoons soy sauce

    1/2 cup green onion -- chopped
    2 tablespoons cornstarch

    Cashews -- as desired





    Recipe



    Mix milk, eggs, salt. Add chicken pieces. Dredge chicken in flour, fry in oil in a heavy skillet until crips and golden. Keep warm. Meanwhile make sauce.

    In a sauce pan, mix 2 1/2 C water with the boullion cubes (or 2 1/2 C chicken broth), oyster sauce, soy sauce, and onion. Heat just to boiling, reduce heat and simmer while chicken is frying.

    When chicken is done, mix remaining 1/2 C liquid with cornstarch until smooth. Bring sauce back to boil, add cornstarch mixture stirring constantly. Cook about 3 min. until thickened. Remove from heat.

    Serve over chicken, sprinkle chopped green onion tops and cashews over top, serve with either steamed or fried rice.


    Yield: 4 servings
