Abernathy Biscuits (Scottish cookies)

5 1/2 C flour
1 1/2 tsp lemon zest
1 1/2 C sugar
1 1/2 C shortening
3 eggs
3 TBS milk
3 TBS caraway seeds
Recipe
Cimbine flour, sugar and baking powder. Cut in shortening to be coarse crumbs. Beat eggs, lemon zest, and caraway seeds. Blend liquid mixture into dry ingredients; if too stiff, add milk, 1 TBS at a time. Roll dough to 1/4 inch on floured surface. Cut with 2 inch round cutter. Place 2 inches apart on greased cookie sheets. Bake a 375° F for 7 to 10 minutes until edges are lightly brown. Cool on rack
