    2 lbs. fresh bing cherries or 3 (17 oz) cans dark, sweet cherries - drained

    2 cups firmly packed dark brown sugar

    zest of two oranges

    5 whole cloves

    1 star anise (available at specialty food shops)

    1 cup brandy

    rounds of puff-pastry and ice cream, as accompaniments







    Recipe



    Instructions


    In a saucepan over moderate heat, combine the cherries, sugar, orange zest, cloves, and anise. Bring mixture to a boil, stirring; then simmer, covered, until cherries are soft.


    Add the brandy; bring to a simmer, and flambe.


    Place ice cream in the pastry puffs; spoon cherries over the ice cream.

    Serves 6 to 8
