If you have a chafing dish, or a portable burner (butane) this is easy to do at the table in front of every one. if you dont, heat the cherries/sauce on the stove, and bring it to the table in a pan or casserole. use 151 rum, just pour some on, not too much, and touch it with a match! pretty blue flames! it will go out on its own, as the alcohol burns off. just be careful of peoples hair, small children, and anything above it. flames dont go up to high, though. take a test drive, just put a bit in a pan and light to see how high they go, before the big day, then yiou can be comfortable with it. dont try to carry it while its flaming, and make sure the flames are out before serving.
