Pumpkin Crisp

List of Ingredients
1 large can pumpkin or 3 cups
1 large can evaporated milk
1 cup sugar
3 eggs
1/2 teaspoon cinnamon
MIX above ingredients together.
1 box yellow cake mix
1 cup chopped nuts
2 sticks melted margarine
Preheat oven to 325 degrees. Grease and line with wax paper a 9x13x2 inch pan.
Mix pumpkin, sugar, eggs and cinnamon and milk. Pour into pan.
Sprinkle dry cake mix over pumpkin micture evenly. Pour nuts over cake mix. Drizzle melted margarine over nuts.
Bake 50 to 60 minutes. Invert onto tray and slowly peel off wax paper. Let cool.
Icing:
8oz. cream cheese
3/4 to 1 cup Cool Whip Topping
1-1/2cup powdered sugar
Blend and spread on cake. Refrigerate (over night is best) so it has time to set.
Recipe
I cover a piece of card board with tin foil and invert the cake on it when I make this to take someplace. That way there is no pan to worry about. Hope you enjoy as much as we do!!!
