1 HALIBUT STEAK, 1/2 POUND
1/2 CUP UNSWEETENED PINEAPPLE JUICE
1/4 CUP WATER
1/2 SWEET POTATO, ABOUT 5 OUNCES, PARTIALLY COOKED AND CUT INTO 1" PIECES
2 PLUM TOMATOES, COARSELY CHOPPED
1 TABLESPOON LIME JUICE
1/4 TEASPOON GROUND ALLSPICE
1/4 TEASPOON BLACK PEPPER
1/8 TEASPOON GROUND RED PEPPER, CAYENNE
1 1/2 CUPS HOT COOKED RICE
Recipe
COAT NONSTICK SKILLET WITH COOKING SPRAY AND HEAT. ADD GREEN AND RED PEPPER STRIPS, SAUTE 1 MINUTE. ADD HALIBUT, SAUTE 1 MINUTE PER SIDE, STIRRING.
ADD PINEPPLE JUICE, WATER, SWEET POTATO, TOMATOES, LIME JUICE, ALLSPICE, BLACK PEPPER AND CAYENNE PEPPER TO SKILLET. COVER AND SIMMER 3 MINUTES OR UNTIL FISH IS COOKED THROUGH. CUT FISH IN HALF.
SERVE EACH HALF OVER 3/4 CUPS COOKED RICE.
