3 Tbsp diced red peppers
3 Tbsp diced shallots
1 Tbsp sherry
1 egg
1/4 cup cream
3 Tbsp lemon juice
Dash Tabasco
Pinch celery salt
1/2 tsp paprika
Pinch ground white pepper
Pinch salt
3 Tbsp chopped parsley
1 lb. Dungeness crab meat (break up larger pieces)
1/2 cup fine bread crumbs
Form crab mixture into patties. Pat on bread crumbs. Store between sheets of wax paper until ready to cook.
Pan-saute in melted butter until brown on both sides. Enjoy!
Serves 4
(Makes 16, 2-ounce patties.)
Recipe
Mix red peppers and shallots together. Mix together all other ingredients (except crab and bread crumbs) thoroughly in a separate bowl. Add peppers and shallots; mix by hand. Add crab and mix.
