    1 large onion, sliced
    1 extra-lean beef brisket (4 1/2 to 5 pounds), all visible fat removed
    1 cup Bloody Mary mix (mild or hot)
    1 cup lemon-lime soda (8 ounces)
    Juice of 1 lemon (about 1/2 cup)
    2 teaspoons Worcestershire sauce
    1 package (1.61 ounces) brown gravy mix
    Game Thyme Biscuit Squares (see recipe)

    Preheat oven to 325 degrees.

    Layer onions and beef in large roaster or 9-by-13-inch baking pan.

    In 4-cup measure, stir together Bloody Mary mix, lemon-lime soda, lemon juice and Worcestershire sauce; whisk in gravy mix. Pour over beef; cover tightly with foil so steam helps tenderize beef.

    Bake in preheated oven 3 hours or until beef is tender when pierced with fork. Cool 15 to 20 minutes. Cut across grain into thin slices. Arrange beef in 9-by-13-inch baking dish or totable carrier. Pour sauce over beef. Cover. Keep warm until serving time or refrigerate and reheat as needed. Serve with Game Thyme Biscuit Squares. Makes 8 to 10 servings.

    Game Thyme Biscuit Squares
    3 cups buttermilk biscuit and baking mix
    1 tablespoon finely chopped fresh parsley
    1/2 teaspoon dried thyme leaves
    1 cup sour cream
    1/2 cup milk
    2 tablespoons butter or margarine, melted

    Preheat oven to 400 degrees.

    In large bowl, stir together baking mix, parsley and thyme.

    In 2-cup glass measure, combine sour cream and milk; stir into baking mix mixture until dough forms a ball. Turn out onto surface dusted with additional baking mix. Knead 10 times. Place in 8-by-6-by-3-inch totable dish. Using knife, cut dough into squares. Drizzle with butter.

    Bake in preheated oven 18 to 20 minutes, or until golden brown. Cover loosely; keep warm until serving or reheat as needed. Makes 12 biscuits.
