Ghirardelli Chocolate Cake (serves 8-10): 1 package cake mix, 1 c. vegetable oil, 1 c. buttermilk, 2 eggs, 1 c. boiling water, 1 tsp vanilla extract. Preheat oven to 350ºF. Place cake mix in large bowl and add the oil, buttermilk, eggs, water and extract. Blend on low speed for 3 minutes, or until the mixture is smooth. Pour the batter into a greased 13x9 inch pan and bake for 30-40 minutes. Remove from oven and let cake cool. Cream cheese frosting: 1 pound powdered sugar, 1 3 ounce package of cream cheese, 1/2 c. butter softened, 2 tbl milk, 1 tsp vanilla. In small bowl of electric mixer, cream together the sugar, cream cheese and butter. Gradually add the milk and vanilla and beat mixture until it is smooth. Frost cooled cake.
