    6 cups grated seeded and peeled zucchini
    1/4 cup lemon juice
    1 cup drained pineapple
    1 pkg pectin
    6 cups sugar
    1 (6 oz) pkg apricot gelatin

    Recipe



    combine zucchini and lemon juice in a sauce pan and cook for 1 hour. stirring occasionally. Add pineapple, pectin and
    sugar. Boil for 6 minutes; stirring constantly. Add gelatin. Stir until dissolved. Pour into hot jars and seal.
