Ham Glaze

List of Ingredients
1 fresh ham (shank, bone in)
1 tsp. nutmeg
1 clove garlic (minced very fine)
1 tsp. pepper
1 tsp. yellow mustard (prepared)
1 cup honey
whole cloves
1 cup orange juice, (fresh squeezed, not concentrate or store bought)
(you can use 1 cup canned pineapple juice if preferred)

Recipe
The night before ......
Carefully remove packaging from ham and cut away outside “skin” and as much fat as possible.
Score the surface of the ham with a cross pattern (making diamonds approx. 1”).
Insert 1 clove where each line intersects.
Mix together ...
The honey, nutmeg, garlic, pepper and mustard.
Place ...
The ham in a large baking pan, “face” down. Rub the honey mixture all over the ham (including “face”).
Lay ham on its side, cover with aluminum foil and refrigerate overnight.
In the morning ...
Squeeze the oranges & strain to remove the pulp.
Pour the orange juice over the ham & tightly cover with the foil.
Bake
2 hours @ 350 .... basting every half hour & remembering to tightly cover after each.
Remove cover and bake an additional 1/2 hour (or until dark golden brown) ... basting every 10
minutes.
Baste again before slicing & serve sauce on the side.
