    Meat loaf (stuffed)
    2 lbs lean ground beef
    1/4 c tomato sauce
    1/2 C instant potato flakes
    2 eggs
    1/2 C finely chopped onions
    2 tsp salt
    1/4 tsp pepper
    1 TBS steak sauce of choice
    1 clove garlic, crushed
    1 tsp Worchestershire sauce

    Recipe



    Mix ingredients well. Place between two sheets of waxed paper and roll to rectangle 16 in x 8 1/2 in x 1/2 in. Set aside.

    Filling:
    15 oz Ricotta cheese
    1 (10 oz) pkg frozen, chopped spinach, thawed and well drained
    1 egg
    1/2 C grated Parmesan cheese
    1 TBS instant potato flakes
    1/4 tsp salt
    1/8 tsp pepper

    Combine ingredients well. Preheat over to 350° F. Spread filling on meatloaf to 1/2 inch from edges. Roll up like jelly roll, pulling off waxed paper in the process. Place seam side down in a 9 in x 5 in loaf pan. Set aside.

    Glaze:
    2 TBS brown sugar
    1/4 C tomato sauce
    1 1/2 tsp dry mustard
    2 TBS grated Parmean cheese

    Combine ingredients and pour over loaf. Bake for 60 minutes, then pour off excess liiquid from pan. Sprinkle top of loaf generously with additional Parmesan cheese. Continue baking for additional 15 minutes. Allow to cool for 10 minutes before removing from pan. Cool another five minutes before slicing. Serves 8
