    1/2 cup all-purpose flour

    1/2 tsp. salt

    1/4 tsp. pepper

    6 (1/2" thick) boneless pork chops

    2 TBS. vegetable oil

    1 (8 1/4oz.) can crushed pineapple

    1 green bell pepper, chopped

    1 cup chopped onion

    1 TBS. molasses

    1 TBS. soy sauce

    1/2 tsp. ground ginger

    Hot cooked rice, optional









    Recipe



    Combine the flour, salt, and pepper in a bowl and mix well. Coat the pork chops with the flour mixture.

    Cook pork chops in vegetable oil in a 10" skillet over medium heat until browned, about 3 minutes per side. Reduce heat to low.

    Place undrained pineapple juice in a 1-cup measure. Add enough water to measure 1 cup. Pour over pork chops in skillet. Add bell pepper and onion and mix well.

    Combine molasses, soy sauce and ginger in a small bowl and mix well. Stir into the pork chop mixture.

    Simmer, stirring occassionally, for 30 minutes. Serve over rice, if desired.
