Fruited Rice

List of Ingredients
- 1 cup rice (long grain)
- 1 small onion
- 1/4 cup butter
- 1-3/4 cup chicken broth
- 1/2 cup chopped dried apricots
- 1/4 cup pine nuts
Instructions
- Brown pine nuts in melted butter over medium heat. Remove with slotted spoon and reserve.
- saute onion in melted butter, then add rice until coated with butter. Add chicken broth to rice and onion mixture and cook covered on stove top until rest of liquid is absorbed.
- Add apricots and pine nuts and cook and additional 10 minutes.
