    Butterscotch: Butterscotch Meringue Pie

    List of Ingredients



    for the filling:

    3/4 c. firmly packed light brown sugar
    1/3 c. flour
    1/2 tsp. salt
    2 c. scalded milk
    2 eggs, separated, yolks slightly beaten
    2 tbsp. butter
    1 tsp. vanilla flavoring
    1 baked pie crust

    for the meringue:

    2 egg whites from above
    4 tbsp. white granulated sugar
    1/4 tsp. vanilla flavoring



    Recipe

    for the filling:

    Stir together the brown sugar, flour, and salt.
    Slowly add the milk, egg yolks, and butter.
    Bring to a boil stirring constantly.
    Remove from the heat.
    Stir in the vanilla and pour into the pie crust. Set aside.
    Preheat oven to 400.

    for the meringue:

    Whip the egg whites until stiff peaks form.
    Slowly at the sugar until it is mixed in.
    Then carefully add the vanilla.
    Spread on top of pie and bake for 5 to 7 minutes, or until a light golden color.
