    Cherry:Best Cherry Pie

    2 cans sour pitted cherries
    2 1/2 tablespoons tapioca
    1/4 teaspoon salt
    1/4 teaspoon almond extract
    1 teaspoon lemon juice
    1 1/4 cups sugar
    1 tablespoon butter
    1/3 cup leftover juice from cherries




    Recipe

    Prepare crust in pie pan and coat crust with margarine to cover then place in freezer to let harden this allows a prefect bottom crust.Drain cherries keeping 1/3 of the juice. Add to the juice, tapioca, salt, almond, and lemon juice, mixing well. Fold in drained cherries and sugar and pour into crust. Add top layer and bake in a 425 degree oven for 45-50 minutes. Be sure to cover the edges with alum foil to prevent from burning remove 15 min before pies are done.
