    Found this delightful recipe in a cookbook put out by the American Cancer Society. It takes me back to that wonderful Hawaiian vacation...


    List of Ingredients


    • 3/4 cup sugar
    • 3 Tablespoons flour
    • 1/4 tsp salt
    • 3 eggs
    • 3/4 cup milk
    • 1-1/2 cups crushed pineapple , undrained
    • 1-1/2 tsp grated lemon rind
    • 1/4 cup butter
    • 1-1/2 tsp gelatin, dissolved in 3 Tablespoons milk and 1-1/2 tsp lemon juice
    • Topping
    • 1/2 cup whipping cream
    • 1 tablespoon sugar
    • 2 tablespoons crushed pineapple, well drained


    Instructions


    1. Mix sugar, flour and salt together.
    2. Separate eggs; add slightly beaten yolks to milk and blend with flour mixture.
    3. Add pineapple and lemon rind.
    4. Cook over hot water 25 minutes. Stirring constantly until thick and smooth.
    5. Remove from heat and blend in butter, gelatin and lemon juice.
    6. When cold fold in stiffly beaten egg whites. Pour into a 10 inch baked pastry shell.
    7. Chill until set.
    8. For topping- Whip cream; add sugar and decorate with well drained pineapple
