Lemon:Dream Pie

List of Ingredients

4 eggs
Juice and grated zest of 2 lemons (yellow part only)
1 1/2 cups sugar
2 tsp. cornmeal
3 Tbsp. butter OR shortening
1/2 cup chopped pecans
1/2 cup coconut (flaked or shredded)




Recipe

Add lemon juice to well beaten eggs and stir. Add sugar and mix well. Mix and add chopped pecans and coconut with cornmeal, lemon zest, and butter. Mix well and pour into unbaked pie shell. Bake at 400 degrees for 5 minutes, then reduce oven temperature to 350 degrees and bake for an additional 50 minutes.
