Jeannie's Notes-One thing my mother was known for was making great pies. We all waited for Thanksgiving to especially roll around each year because she would make such a variety; all of which had her signature pie crust. This recipe is for 2 double crusted pies.
List of Ingredients
3 cups sifted flour
1/2 tsp. salt
1 tbsp. sugar
2 1/2 sticks margarine
1/2 cup ice cold water
Recipe
Using a pastry blender or fork mix margarine with dry ingredients until textrue is very fine. Add cold water and mix in quickly with fork, only untildough begins to stick together. Divide into 4 portions. Roll out, fill, moisten edges with cold water or fruit juice, add top crust, crimp edges (after trimming).
Bake in a 400º oven for the first 10 minutes. Reset oven to 325º and bake until crust is brown and crisp, about 30 minutes longer.
Mom's hint: The light touch is best when handling pie crust.
