Peanut Pumpkin Pie

- 2 16 oz cans pumpkin
- 3/4 Cups honey
- 1/2 Cup peanut butter
- 2 TBLSP light molasses
- 1 tsp. ground mace or nutmeg
- dash salt
- 5 eggs
- 1-1/2 cups dairy sour cream
- 1/3 cups toasted chopped unsalted peanuts
- 2 pastry for single-crust pie
- whipped cream
Instructions
- For filling, in a large mixing bowl combine pumpkin,honey, mace or nutmeg, and salt.
- Add eggs. Beat with a fork.Stir in sour cream &1/3 cup nuts.
- Add pumpkin filling to pie crusts. Coveredges with foil. Bake 375 degrees oven for
- 25 minutes. Remove foil and bake another25 minutes. Cool on wire rack.
