Baked Reuben Chicken

4 boneless chicken breasts
1 (16 oz) can sauerkraut, drained
4 slices swiss cheese
1 1/4 C Thousand Island Dressing
salt and pepper to taste
Recipe
Preheat oven to 325° F. Place chicken breasts in a greased baking dish. Sprinkle generously with salt and pepper. Spoon drained kraut over chicken, evenly. Top with cheese slices and dressing. Cover with foil and bake about 1 1/2 hours. Serve over brown rice with rye bread on the side.
