Recipe Introduction
This chicken soaks up the flavors of a spicy barbecue based sauce, enhanced with balsamic vinegar. The sauce has a nice peppery bite, you can decrease the pepper if you like your barbecue mild, or increase it up to 4 tablespoons if you love "hot stuff".
List of Ingredients
For the sauce: (8 cups)
4 cups of *Butch barbecue sauce or your favorite BBQ sauce
1 cup of balsamic vinegar
1 1/4 cups of Worcestershire sauce
3/4 cup of Dijon Mustard
1/2 teaspoon of salt
1 tablespoon of black pepper
3/4 cup of canola or other mild flavored vegetable oil
3/4 cup of olive oil
For the chicken:
6 chicken breast halves (bones in and skin on)
salt and pepper to taste

To make the sauce, combine all of the ingredients in a large bowl and stir well. reserve 2 cups for the marinade and store the remainder in a covered container in the refrigerator.
Put the chicken breasts in a shallow ovenproof dish large enough to hold the chicken in a single layer. Season lightly with salt and pepper and pour the 2 reserved cups of sauce over them. Cover the dish with foil and place in the refrigerator for 1 hour to marinate the chicken.
About 20 minutes before you plan to cook the chicken, preheat the oven to 400 degrees F.
Put the baking dish, marinade and all, in the oven and bake for 20 minutes. Turn the breasts over and bake for an additional 15 - 20 minutes or until the chicken is fully cooked.
