I think I would try whole pieces of chicken even though the recipe calls for bite size...
List of Ingredients
4 boneless chicken breasts
2 C flour
1 large container buttermilk
1/2 tablespoon of each of the following
thyme
itallian seasoning
pepper and salt
red pepper to taste
Recipe
cut the chicken into bite sized cubes and marinate in buttermilk over nite adding a pinch of red pepper flakes, itallian seasoning and thyme. (if in a hurry marinade for at least 2 hours in a ziploc bag)
mix in another ziploc the rest of the seasoning along with the flour and throw in the chicken a few chuncks at a time.
Let the breaded chicken rest on a cookie wire rack and redip in the buttermilk and back into the batter to make sure all of the pieces are coated.
Cook in a deep fryer until golden brown. Or on stove top in about 1 cup oil. I usually test a few to make sure they are done. Let them drain on paper towels and enjoy
