    1 whole chicken, cut into 9 pieces
    1/2 cup buttermilk
    2 cups self-rising flour
    3 to 4 cups vegetable shortening
    2 tsp salt, divided
    1 tsp pepper, divided
    1 Tbsp poultry seasoning

    Instructions
    Place chicken pieces in a one-gallon plastic food bag. Mix the buttermilk with 1 teaspoon salt and 1/2 teaspoon pepper. Pour buttermilk mixture over chicken in bag and seal. Marinate for at least 2 hours or overnight.

    Measure flour, 1 teaspoon salt, 1/2 teaspoon pepper, and the poultry seasoning into a large double paper bag. Place half the chicken pieces in the bag and shake to coat. Remove the chicken from the bag, shaking off excess flour. Place chicken on a wire rack and repeat with the remaining chicken.
