Goat Cheese Croutons

List of Ingredients
Cut in 1/2-inch Slices:
2 (3-inch) soft goat cheese logs
Coat with:
1/4 cup olive oil
Pat with Crumb Mixture:
1/4 cup purchased bread crumbs
1/4 cup walnuts, ground
Broil until Golden.
Recipe
Use dental floss to slice the cheese logs cleanly. Pour the oil into a shallow bowl or saucer and coat both sides of each cheese slice. Then dip the slices into the crumb mixture. You can do this ahead of time.
Place the cheese croutons on a baking sheet. Broil for 3 to 4 minutes, or until the cheese softens slightly and crust turns deep golden.
Transfer croutons to salads with a spatula. Serve immediately.
