Hawaiian Turkey Salad

2 cups cooked chicken or turkey, cubed
2 cups cold cooked brown rice (use quick-cooking)
1 cup celery, diced
1 can (8 0z.) sliced water chestnuts, drained
1 can (15 oz.) pineapple tidbits, drained
1/3 cup light mayonnaise
2 Tablespoons skim milk
1 Tablespoon lemon juice
1/2 tsp. Salt (optional)
1/2 tsp. Curry
1/2 tsp. Pepper
Recipe
In a large bowl, mix chicken, rice, celery, water chestnuts and pineapple. In a smaller bowl, mix the remaining ingredients for the dressing. Toss dressing with the chicken mixture
