Rice and Artichoke Salad (cold)

2 pkgs. (6 ounce each) chicken flavored rice (Rice a Roni)
2 jars (4 ounce each) marinated artichoke hearts
1/2 cup pitted black olives, sliced
6 scallions, chopped
1/2 cup mayonaise
freshly ground pepper
1/2 cup diced pimientos

Instructions
Prepare the rice according to the package instructions. Let it cool to room temperature.
Drain the liquid from the artichoke hearts into a large bowl; coarsely chop the artichoke hearts and add them to the bowl.
Add the olives, scallions, mayonnaise, pepper, and pimientos to the bowl. add the cooked rice, mixing well.
Refrigerate the salad for 4-5 hours before serving.
