List of Ingredients
2 medium onions, chopped
2 stalks celery, diced
3 carrots, cut into thin cubes
3 Tbsp. extra virgin olive oil
1 1/2 Tbsp. all-purpose flour
1/2 tsp. salt
3 cups milk (preferably 2%)
2 1/2 cups diced cooked potatoes
1 Tbsp. sweet paprika
2 tsp. prepared horeseradish
Recipe
1. In a large, heavy saucepan, add onions, celery, carrots and oil; cook 6 to 8 minutes.
2. Stir in flour and salt, stir to blend. Gradually, slowly add milk. Add potatoes, paprika and horseradish. Simmer 4 to 6 minutes, until thickened and hot.
Serve in bowls with toasted French bread and a salad.
Makes 4 to 6 servings
