    Spicy Pumpkin & Carrot Soup

    List of Ingredients




    1 Tblspn oil
    1 onion chopped
    1 rindless bacon rasher finely chopped
    1 clove garlic crushed
    1-2 tspns curry powder
    1/2 butternut pumpkin seeded & chopped
    1 potato chopped
    1 carrot chopped
    6 cups chicken stock
    salt & black pepper to taste
    1/2 cup milk/cream
    extra cream
    chives

    Recipe



    Heat oil in large pot. Saute onion, bacon & garlic until onion is tender. Add curry powder, saute 1 minute. Stir in pumpkin, potato & carrot. Cook, stirring 2-3 minutes. Pour over stock. Stir in seasonings, bring to boil. Reduce heat, simmer, covered 25-30 minutes or unto vegetables are very tender. Puree with a masher, stir in milk. Reheat gently, stirring. Serve with a swirl of cream & sprinkling of chives or top with fried croutons of bread.
