    The Fastest Way to Wash Spinach and Other Greens:


    Fill your sink or a large bowl with fresh, cold water.

    Add the greens and swish them around with your hands to dislodge grit and dirt. Let them stand a few minutes so the dirt sinks to the bottom of the bowl or sink.

    Lift the greens from the water and spin dry in a salad spinner or blot with paper towels.

    Never pour the greens and water through a colander to drain: You’ll pour grit and dirt right back on top of your clean greens!

    To peel garlic quickly: Snip the pointy end off of individual cloves and microwave them for 10 to 15 seconds.

    To chill hot foods quickly: Spread grains or sautéed vegetables on a sheet pan; break down large batches of sauces, soups, and stews among smaller containers and set in an ice bath.

    To bring eggs to room temperature (they blend better with other ingredients at room temperature): Place them in a bowl of warm water for 10 to 15 minutes before using.

    To coat chicken pieces or stew-meat pieces chicken in flour or crumbs: Place the coating mixture in a plastic bag (self-sealing is the most convenient), add the chicken or beef, seal, and shake until the coated. Shake off any excess coating before you cook the chicken or beef.

    To remove pits from olives: Place a few olives on a cutting board or other work surface. Hold the flat blade of a chef’s knife so that it is resting on top of the olives. Give the blade a quick, sharp push with your other fist to split open the olives, then remove the pits.

    Two ways to clean leeks:
    Cut off dark green top and discard or save for stock. Trim root end, leaving base intact so that leek remains in one piece.

    Starting ½-inch from base, slit leek through the other end; give it a quarter turn and repeat, so the leek is quartered and the root end is intact.

    Soak the leek in cold water or rinse it under running water, gently spreading the leaves to remove any grit and dirt. OR

    Cut leeks in strips of pieces as directed in your recipe.

    Swish pieces in bowl of cold water to dislodge dirt and grit. Lift pieces from water, leaving dirt at the bottom of the bowl.
