    Mashed Potatoes-Mexican

    Make mashed potatos as normal. Add a tablespoon or so of mayo, chopped onion to taste. Then I dice up velveeta (mexican flavor). Mix this all together and spoon into a casserole. Top with 1 inch slices of bacon and bake at 350 degrees until browned on top.
