    Mixed Vegetables with Peanut Sauce

    3 tablespoons creamy peanut butter
    1 1/2 cups water
    1 garlic clove, minced
    1 tablespoon brown sugar
    1/4 teaspoon cayenne pepper
    1 tablespoon lemon juice
    salt to taste
    1 cup sliced cabbage
    1 cup diced green beans
    1 pound spinach, cleaned and trimmed
    1 cup bean sprouts

    Recipe



    Combine the peanut butter, water, garlic, brown sugar, cayenne and lemon juice in saucepan. Bring to a boil, reduce heat and simmer for 2 minutes. Add salt and cool.

    Boil the cabbage and beans in salted water (enough to cover) for 20 minutes. Add the spinach and simmer for 5 minutes. Add the bean sprouts and cook, stirring, for 1 minute. Drain. Place vegetables on a large serving dish. Top with sauce and serve immediately.
