    For me, making bread is a great stress reducer, and making a bread with olives in it really makes my day. Pair this bread with just about any soup or salad and you have a winning meal.

    List of Ingredients




    3 cups warm water (90 to 115 degrees)
    2 tablespoons or 2 packages active dry yeast
    2 tablespoons olive oil
    1 tablespoon salt
    6 to 8 cups flour
    2 cups chopped cured olives
    2 tablespoons chopped fresh basil

    Recipe



    Place water and yeast in a mixing bowl and stir to mix. Let stand for about 10 minutes, or until creamy and foamy. Add olive oil and salt and mix. Add flour, about 1 cup at a time, until you get a shaggy dough. Add olives and basil and mix just until olives are blended into the dough. Pour onto a floured board and knead until the dough is smooth and elastic.

    Place dough in a well-greased bowl and allow to rise until doubled in volume, about 1 hour.
    Deflate the dough, split it into 2 pieces, and form into 2 round loaves.

    Preheat oven to 400 degrees. Let loaves rise for 20 to 25 minutes, then place on a greased baking sheet and bake for about 45 minutes, or until they are brown and sound hollow when tapped. Remove from the oven and allow to cool before slicing.

    Makes two loaves.
