1 1/4 cups flour
1 cup whole wheat flour
2 tablespoons brown sugar
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon ginger
1/2 teaspoon cloves
1/2 teaspoon salt
2 cups buttermilk -- 2%
1/4 cup molasses
2 egg whites
Recipe
In a large mixing bowl, combine the flour, whole wheat flour, brown sugar,baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
In small bowl, whisk together the buttermilk, molasses, and egg whites. Stir into the flour mixture just until moistened.
Coat a non-stick skillet with nonstick cooking spray and heat over medium heat. For each pancake, pour about 1/4 cup batter onto the hot griddle. Cook for 1-2 minutes or until the pancakes are bubbly and slightly dry around the edges. Turn over and cook briefly until golden. Serve immediately
