    My recipe, adapted from another

    List of Ingredients




    1 1/2 Cups Wesson Oil
    2 Cups Sugar
    1 Teaspoon Vanilla
    4 Eggs
    3 Cups Grated Carrots
    1 Cup Pecans, chopped
    2 Cups Flour
    2 Teaspoons Baking Soda
    2 Teaspoons Baking Powder
    2 Teaspoons Ground Cinnamon
    1 Teaspoon Salt

    Recipe



    Mix dry ingredients. Add Wesson oil and vanilla to dry
    ingredients, and mix well. Add eggs, one at a time, beating
    well after each addition. Add carrots and pecans.

    Pour into baking pans (I use a sheet cake pan) and bake one
    hour at 350 degrees. Ice with Scotch Icing or Coconut Pecan
    Icing.
